The zippy citrusy flavor of the Riesling and lemon together makes this dressing our favorite. If you enjoy wine with salad the most important part is not to over season your dressing. Too much of vinegar and garlic and you will have a sour tasting wine. Over the years we learned that for a wine friendly dressing the key factor is balance and tiny amount from strong flavors like garlic, onion, chives to mention a few and you can marvel in your delicious success.
You can also substitute Riesling to Sauvignon Blanc, we did it many times…
Riesling Salad Dressing
Ingredients
- 1/2 cup Riesling Wine
- 2 Tbsp Meyer Lemon Juice
- 1/2 cup Salad Oil -
- 1/2 Tsp Sea Salt
- Pinch of Coconut Sugar
- Pinch of Garlic Salt
- 1/4 Tsp Black Pepper - freshly ground
Instructions
- Whisk all ingredients together in a medium bowl. If you have a salad dressing shaker bottle you can use it too.
- Drizzle over mixed greens or roasted vegetable.
- You can use other lighter (not too oaky) dry fruity white wine, like: Sauvignon Blanc. If your wine is a little on the sweeter site, then omit the coconut sugar.
