How to make the best Heirloom Tomato Salad recipe

This healthy Heirloom Tomato Salad is drizzled with our delicious Balsamic Red Wine Reduction and served in an easy to make Parmesan Basket (for which we also have the recipes posted). For this salad, you will need a small shallot minced really fine. We like to use shallot instead of onions because shallot has milder taste, and when you are cooking with wine you do not want the other flavors to overpower the wine.
The heirloom tomatoes have rich flavors and we love the different colors and shapes as well.
Corina: My mom showed to me to use a serrated knife when cutting tomatoes. You do not have to make them look perfect, just cut bite size chunks. If you can’t find heirloom tomatoes then just use regular tomatoes. Place the chopped tomatoes into a salad bowl and season with salt and pepper.

Judit: lets toss the salad and add a dash of olive oil. Then drizzle in the wine reduction sauce and toss some more. How does it taste?
C: The wine and the honey has nice balanced acidity.
J: When you are cooking with wine and making salad it is wise to use a milder vinegar or a balsamic vinegar. The acidity from the vinegar can ruin the flavors of your wine
C: Then toss in some arugula and now add some fresh basil leaves to the salad.
J: Now you can place a little arugula into the bottom of your Parmesan basket so the dressing will not leak through. Spoon the tomato salad on top
C: And now I will add dollops of fresh goat cheese
J: You will love the tanginess of the goat cheese with this wine
C: And finally add a few more basil leaves on top as decoration
J: Look how nice syrupy consistency has the wine reduction. Just drizzle a little bit more over on top.
C: Now is time to try it with the wine
J: Absolutely, lets enjoy the wine
C: We have here a Castiglion del Bosco Brunello di Montalcino – it is made from Sangiovese
J: Let the wine open a bit
C: Cherry on the nose with sweet honey which will go nice with the wine reduction sauce
J+C: Cheers, and Cheers to you too!
C: On the tongue more berry, dark cherry
J: A very precise wine, elegant, focus and food friendly. It has enough acidity on the front of my tongue
C: It is velvety smooth
J: These little baskets look so cute wish we could make some with sweet cheese for dessert. I love the tanginess of the tomato and shallots in the salad and the goat cheese gives a wilder note.
C: And the lovely balsamic reduction marries all these flavors together.
J: Let’s sip on our wine!
C: It goes actually very well together.
J: Really works seamless this great salad with the Brunello wine together. Now I have to try the cheese..it goes very nice together.
C: Oh yes, it is very nice together. Because the Balsamic dressing has the wine reduction in it, that is why the salad is not so harsh. This is a nice pairing.
J: And the cheese brings the smoky flavor out of the wine. This is a very beautiful pairing.
